Madeleines Recipe
Ingredients (around 12 madeleines)
100g Eggs
115g Sugar
15g Honey
80g Semi-skimmed Milk (warm)
180g Flour (sieved)
6g Baking Powder
250g Butter (melted)
10g Vanilla Extrac
Process
1. Whisk the eggs, sugar and honey.
2. Pour the warm milk (20°C).
3. Add the flour and baking powder.
4. Pour the butter and vanilla extract.
5. Cover the mixing bowl with cling film.
6. Store it the fridge for 1h30.
7. With a piping bag, fill the molds up to 2/3.
8. Bake for 10 to 12 minutes at 190°C.
Tips - Lightly butter and flour the molds before filling them.
